How sushi bars use this gift certificate

Sell them at the counter or online, give them as prizes for local raffles, or use them to say sorry. Each certificate is a promise, so record what you sell. Worth including: your fish suppliers or the chef's training.

Mark raw and cooked items clearly, and keep a short legend for rolls that contain shellfish. Check your state's rules on gift certificate expiry before adding an expiry date.
